Cowley College to offer Culinary Skills Class

 

Beginning January 19, 2011, Cowley College will offer a Culinary Skills class. The class will focus on teaching the skills of the professional cook, whether it is to have the knowledge for a career in the food service industry or entertain family, guests, or friends. Learning about the food service industry can be an exciting career.

Flexible skills are essential for success in a cooking career, with tremendous variety in American food service, from the neighborhood coffee shop and school cafeteria to the executive dining room and most elegant restaurant or hotel. People who understand cooking methods, cost factors, and other elements of food preparation can function successfully in any type of food service operation.

The class will provide the student with sanitation and safe food-handling procedures. Food preparation will include using seasonings and recipes with other methods of preparing a tasty meal with components of menu planning and the styles of food service used for various occasions. Students will also be able to define the basic concepts of mise en place as well as specific operations that are normally part of the mise en place, a French term, meaning “everything put in place.”

The class will meet on Wednesday evenings in the Webb Brown Academic Center on the Arkansas City campus from 7-9:45. The instructor will be James Brown, a professional chef, who has made his career in the food service profession.

Slade Griffiths, vice president of academic affairs at Cowley College, will be among those enrolled in the initial culinary class.

“We had received many requests to do a cooking class and this will meet those needs,” Griffiths said.

The cookbook, which features recipes from Cowley College employees, is available for only $12. An endowed scholarship will be established with the proceeds from the cookbook to help students complete their first two years of schooling at Cowley College.
